The Mud Street Muffin
The Basic Recipe for 12 Muffins
1/2 cups of flour
1 cup sugar
1 tsp salt
1 1/2 tsp baking soda
2/3 cups melted butter
1 3/4 cups buttermilk
(microwave for 40 seconds)
2 eggs
(at room temperature or place in hot water for 5 minutes)
1 tsp vanilla
Crumb Mixture
1 1/3 cup of flour
1/2 cup white sugar (heaping)
1/2 cup brown sugar (heaping)
1/2 cup softened butter
Mix ingredients together in food processor until mixed together giving the consistency of bread crumbs.
Directions
Grease two muffin top pans with pan spray. Measure and sift dry ingredients together into large bowl. Make well in center and add half of the buttermilk and the melted butter. Add the two eggs and the vanilla to the remaining buttermilk and beat well with a fork, then add to the other ingredients.
Mix until all of the dry ingredients have just been incorporated into the liquid, but being careful not to over mix. Divide batter evenly between the twelve muffin cups. Top each with approximately 1 T of the crumb mixture. Bake at 360° for 17 minutes.
To test for doneness tap top gently with finger. If it feels solid they are done. If it is soft then continue baking for 2 minutes more and test again. Different flavors require different baking times.
